Method

Step by step

    Bring chicken or shrimp broth to a boil with lemongrass, galangal and lime leaves.

    Add mushrooms and tomatoes, briefly steep.

    Add shrimp or chicken and cook through.

    Adjust with fish sauce, lime juice and chili.

    Sprinkle with cilantro.
