  • Beef tenderloin 100 g very fresh
    as needed
  • Egg yolk
    2 Stk
  • ShallotsOr: Onions
    1 Stk
  • Capers
    ½ tbsp
  • Cornichons
    1 Stk
  • MustardOr: Dijon mustard
    ½ tsp
  • Worcestershire sauce
    ¼ tsp
  • Parsley
    1 bunch
  • Chives
    1 bunch
  • Olive oil
    ½ tbsp
  • Iodized salt
    ¼ tsp
  • Pepper
    ¼ tsp
  • Hot sauce

Method

Step by step

    Finely dice beef tenderloin with a sharp knife (do not grind).

    Very finely chop shallots, capers, cornichons, parsley and chives.

    Combine meat with chopped ingredients.

    Stir in mustard, Worcestershire, olive oil, salt, pepper and hot sauce.

    Form small towers on plates using a serving ring.

    Press a small well into the center.

  7. 7

    Carefully place egg yolk into the well.

  8. 8

    Serve with toast or baguette and garnished with capers.
