- Preserved lemonsOr: Lemon zest, Lime1 Stk
- Black olivesOr: Green olives15 g
- Onions1 Stk
- Garlic cloves1 Stk
- Ginger½ cm
- Saffron1 pinch
- Cumin¼ tsp
- Parsley1 bunch
- Olive oil¾ tbsp
Method
Step by step

Cut chicken into pieces, season with ras el hanout.

Sauté onions and garlic in the tajine in oil.

Add meat, season with saffron, ginger and cinnamon.

Add preserved lemons, olives and broth.
- 5
Close tajine, braise over low heat for 60–90 min.
- 6
Sprinkle with cilantro and serve with bread.
