  • Preserved lemonsOr: Lemon zest, Lime

  • Black olivesOr: Green olives

  • Garlic cloves

Method

Step by step

    Cut chicken into pieces, season with ras el hanout.

    Sauté onions and garlic in the tajine in oil.

  3. 3

    Add meat, season with saffron, ginger and cinnamon.

  4. 4

    Add preserved lemons, olives and broth.

  5. 5

    Close tajine, braise over low heat for 60–90 min.

  6. 6

    Sprinkle with cilantro and serve with bread.
