Method

Step by step

    Finely dice onion, carrot and celery (soffritto).

    Sauté in olive oil for 10 min, add mince and brown sharply.

    Stir in tomato paste and roast briefly, deglaze with red wine.

    Add pelati, season with salt, pepper and bay leaf.

    Simmer over low heat for 60 min.

    Cook spaghetti al dente, toss with the sauce.

    Serve sprinkled with Parmesan.
