Method

Step by step

    Pound lemongrass, galangal, garlic, shallots and turmeric into a paste.

    Fry paste in oil, add chicken and sauté.

    Pour in chicken broth, simmer 30 min.

    Soak glass noodles, hard-boil eggs, prepare bean sprouts and spring onions.

    Adjust broth with fish sauce, salt and pepper.

  6. 6

    Distribute noodles, sprouts and egg halves into bowls, pour broth over.

  7. 7

    Serve with lime and sambal.
