Step by step

Simmer cod in water for about 10 minutes, drain, debone and shred into pieces.

Peel potatoes and cut into fine strips (French fry size).

Fry potato strips in oil until golden, drain.

Slice onions into rings, finely chop garlic.

Heat olive oil in a large pan, sauté onions and garlic until translucent.

Add cod and cook for 3 minutes.

Fold in potato strips.

Whisk eggs, season with salt and pepper and add to the pan.

Stir constantly over low heat until just set, should remain creamy.

Sprinkle with parsley and olives and serve immediately.
