Method

Step by step

    Boil 6 eggs 7 min, shock in ice water, peel.

    Mix sausage meat with mustard, sage, thyme, salt and pepper.

    Divide meat into 6 portions, flatten each.

    Wrap an egg inside, smooth into shape.

    Set up 3 plates: flour, beaten eggs, breadcrumbs.

    Dredge sausage-eggs in flour, egg and breadcrumbs.

    Heat oil to 170°C.

    Fry scotch eggs 7–8 min until golden.

    Drain on paper towel.

  10. 10

    Serve halved, lukewarm or cold.
