  • Rye flour
    30 g
  • Rye groatsOr: Rye flour
    15 g
  • Dry yeast
    1 packet
  • Sourdough
    5 g
  • Water 40 ml lukewarm
    as needed
  • Sunflower seedsOr: Pumpkin seeds

  • Flax seeds

  • Apple vinegar
    ¼ tbsp
  • Syrup 0.25 tbsp beetOr: Honey

Method

Step by step

    Let sourdough mature with 200 ml water and 100 g rye flour for 12 hr.

    Dissolve yeast in lukewarm water.

  3. 3

    Mix flours, groats, salt, bread spice and seeds in a bowl.

    Add sourdough, yeast water, vinegar and syrup.

  5. 5

    Combine into a sticky dough.

    Let rise in a warm place for 2 hr.

  7. 7

    Pour into a greased loaf pan.

    Let rise another 1 hr.

  9. 9

    Bake at 220°C for 15 min, then reduce to 180°C.

    Bake another 60 min, immediately turn out of pan, rest 24 hr.
