Method

Step by step

    Briefly drain sauerkraut in a sieve, separate if needed.

    Render bacon crispy in a pot.

    Add finely chopped onions and sweat until translucent.

    Dice apple and briefly fry along.

    Add sauerkraut.

    Pour in wine and broth.

    Stir in juniper, bay leaf, peppercorns and sugar.

    Braise covered over low heat for 60 min, stirring occasionally.

    Adjust with salt and pepper.

    Fold in butter, serve with pork knuckle or sausages.
