Method

Step by step

    Roughly cube carrots, celery, leek and onions.

    Halve onions with skin on.

  3. 3

    Heat olive oil in a large pot.

    Brown onions cut-side down for 5 min.

    Add remaining vegetables, garlic and tomatoes and briefly toast.

    Top up with water, add bay leaf, peppercorns, parsley stems and salt.

    Bring to a boil and simmer over low heat for 60–75 min.

    Strain broth through a sieve.

  9. 9

    Adjust seasoning and use immediately or freeze.
