- Salmon fresh 100 g sushi-gradeas needed
- Tuna 100 g sushi-gradeas needed
- HamachiOr: Salmon fresh80 g
- Soy sauce60 ml
- Wasabi20 g
- Pickled gingerOr: Ginger30 g
- DaikonOr: Radish50 g
- Shiso leaves2 Stk
- Lime juice½ tbsp

Step by step

Buy fish only in sashimi grade, keep very cold until cutting.

Slice daikon into fine strips with a mandoline, place in ice water.

Moisten a very sharp knife with a damp cloth.

Slice salmon against the grain into 0.5 cm thick slices.

Same for tuna.

Slice hamachi thinly.

Drain daikon strips.

Plate it: daikon as a bed, fish fanned out on top.

Garnish with shiso, wasabi and ginger.

Serve with soy sauce and lime slices.
