  • Salmon fresh 100 g sushi-grade
    as needed
  • Tuna 100 g sushi-grade
    as needed
  • HamachiOr: Salmon fresh
    80 g
  • Soy sauce
    60 ml
  • Wasabi
    20 g
  • Pickled gingerOr: Ginger
    30 g
  • DaikonOr: Radish
    50 g
  • Shiso leaves

  • Lime juice

Method

Step by step

    Buy fish only in sashimi grade, keep very cold until cutting.

    Slice daikon into fine strips with a mandoline, place in ice water.

  3. 3

    Moisten a very sharp knife with a damp cloth.

  4. 4

    Slice salmon against the grain into 0.5 cm thick slices.

    Same for tuna.

    Slice hamachi thinly.

  7. 7

    Drain daikon strips.

    Plate it: daikon as a bed, fish fanned out on top.

    Garnish with shiso, wasabi and ginger.

    Serve with soy sauce and lime slices.
