Step by step

Knead flour with salt, 4 tbsp oil and water into a firm dough, rest 30 min.

Boil potatoes and dice.

Chop onion, sauté in oil, add garlic and ginger.

Stir in spices, add peas and potatoes.

Adjust with lime juice, salt and cilantro, cool.

Form dough into balls and roll into circles, halve.

Form cones from each half-circle.

Fill with filling and seal edges with water.

Heat oil to 170°C.

Fry samosas in batches 6–8 min until golden, serve with mango chutney.
