- Bacon cubes40 g
- Pickles1 Stk

- Carrots1 Stk
- Leek1 stalk
- Celery root25 g
- Tomato paste½ tbsp
- Red wine50 ml
- Beef broth150 ml
- Bay leaves1 Stk
- Sunflower oil¾ tbsp

Step by step

Pound roulades, season with salt and pepper.

Brush inside with mustard.

Lay bacon, pickle sticks and onion rings lengthwise on top.

Roll up roulades, secure with roulade pins or string.

Heat oil in a roasting pan, sear roulades all over, remove.

Dice carrots, leek and celery, brown in the pan.

Add tomato paste.

Deglaze with red wine, then add broth and bay leaf.

Return roulades, braise covered for 90 min.

Strain sauce, bind with beurre manié, serve roulades with dumplings.
