  • Pork roast
    ¼ kg
  • Salt
    ½ tsp
  • Caraway
    ¼ tsp
  • Garlic cloves
    1 Stk
  • Beer
    40 ml
  • Vegetable broth
    50 ml
  • Onion
    1 Stk
  • Carrots
    1 Stk
  • Pepper
    ¼ tsp
  • Marjoram
    ¼ tsp
Method

Step by step

    Score the rind of the roast in a diamond pattern.

    Rub with salt, caraway, garlic and pepper.

    Rub the rind with coarse salt.

    Place roast rind-side down in a roasting pan.

    Add vegetables and broth.

    Braise at 160°C for about 2 hr.

    Flip roast, baste rind with beer.

  8. 8

    Increase oven temperature to 220°C.

    Another 20–30 min until crust crackles.

    Serve with dumplings and sauerkraut.
