  • Beef roast

  • Carrots

  • Celery

  • Red wine
    30 ml
  • Beef broth
    15 g
  • Tomato paste
    ¼ tbsp
  • Bay leaf
    1 leaf
  • Thyme
    1 bunch
  • Pepper

Method

Step by step

    Sear roast on all sides, remove.

    Toast vegetables, add tomato paste, deglaze with red wine and broth.

  3. 3

    Return roast, add bay leaf and thyme, braise covered in oven at 160°C for about 2 hours.

    Remove roast, strain sauce and season.
