  • Roast beefOr: Beef tenderloin
    ¼ kg
  • Olive oil
    ½ tbsp
  • MustardOr: Dijon mustard
    ½ tbsp
  • Garlic cloves
    1 Stk
  • Rosemary
    2 sprigs
  • Thyme
    2 sprigs
  • Iodized salt
    ¼ tsp
  • Pepper 0.25 tsp coarse
    as needed

Method

Step by step

    Take roast beef out of the fridge 1 hr before cooking.

    Preheat oven to 220°C.

  3. 3

    Pat meat dry, season with salt and pepper.

  4. 4

    Heat oil in a pan until very hot.

  5. 5

    Sear roast beef sharply 2 min per side all around.

  6. 6

    Rub with mustard and pressed garlic.

  7. 7

    Place on a roasting rack, top with rosemary and thyme.

  8. 8

    Cook in oven at 120°C for about 45–60 min, core temp 54°C for medium rare.

    Out of oven, drizzle with butter.

  10. 10

    Rest in foil for 20 min, slice thinly.
