Method

Step by step

    Cut eggplant, zucchini and bell pepper into 2 cm cubes.

    Blanch tomatoes, peel and dice.

    Chop onions and garlic.

    Heat olive oil in a large pot.

    Sauté eggplant 5 min, remove.

    Sauté zucchini 3 min, remove.

    Sauté bell pepper 3 min, remove.

    Sweat onion and garlic in the same pot until translucent, add tomato paste.

    Simmer tomatoes with herbs, salt and pepper for 10 min.

    Return all vegetables to the pot, braise 20 min, serve with basil.
