Step by step

Knead flour, salt, cold butter, 1 egg and water into dough, chill 30 min.

Preheat oven to 200°C.

Roll out dough, line a quiche pan.

Cover with parchment paper and pulses, blind bake 15 min.

Render bacon crispy in a pan.

Sweat finely chopped onion in the bacon fat until translucent.

Whisk eggs with cream, milk, salt, pepper and nutmeg.

Distribute bacon and onion on the crust, sprinkle with cheese.

Pour egg mixture over.

Bake at 180°C for 30–35 min until golden, let cool slightly.
