  • Chicken 1 pc whole
    ½ kg
  • Olive oil
    20 ml
  • Lime juiceOr: Lemon juice
    1 tbsp
  • Garlic cloves
    1 Stk
  • Chili flakes
    ½ tsp
  • Cayenne pepper
    ¼ tsp
  • Paprika sweet
    ½ tsp
  • Rosemary
    2 sprigs
  • Thyme
    ¼ tsp
  • Iodized salt
    ½ tsp
  • Pepper
    ¼ tsp
Method

Step by step

    Cut chicken along the backbone with poultry shears (spatchcock).

    Press flat.

    Mix olive oil with lime juice, pressed garlic, chili, cayenne, paprika, rosemary, thyme, salt and pepper.

    Rub chicken with the marinade, let rest at least 1 hr (better overnight).

    Preheat oven to 220°C.

    Place chicken skin side up in a roasting pan.

    Roast 45 min until crispy brown, brushing with marinade.

    If skin browns too fast, cover with foil.

    Let rest 10 min.

    Cut into pieces and serve immediately.
