- Garlic cloves1 Stk
- Mushrooms brown65 g
- Tomatoes 100 g pureedOr: Pureed tomatoesas needed
- Red wine50 ml
- Olive oil1 tbsp

Step by step

Salt and pepper chicken thighs.

Heat olive oil in a braising pot, sear chicken all around, remove.

Dice onion, carrot and celery, sauté in pot 5 min.

Add garlic and sliced mushrooms, fry 5 min.

Deglaze with red wine, reduce.

Add tomatoes, embed rosemary and bay.

Return chicken to pot.

Braise covered 45 min.

Add olives 10 min before end.

Serve with polenta or bread.
