Method

Step by step

    Soak rice in water 30 min, drain.

    Cube lamb.

  3. 3

    Heat oil strongly in a kazan or heavy pot.

    Sear lamb all around, remove.

    Slice onions into half-rings, brown golden in oil.

    Cut carrots into thick sticks, add and fry 10 min.

    Return lamb, add cumin and barberries.

  8. 8

    Pour in boiling water, salt.

    Simmer 45 min (zirvak).

  10. 10

    Distribute rice on top, embed garlic bulbs, lower heat, seal tightly, steam 25 min, combine.
