Method

Step by step

    Soak rice in water for 30 minutes.

    Cube lamb, salt.

  3. 3

    Heat oil in a large pot, brown onions golden, remove.

  4. 4

    Sear lamb in oil all around.

    Add garlic, cumin, cardamom and cinnamon stick.

    Deglaze with broth, braise 60 minutes until lamb is tender.

    Cut carrots into fine sticks and caramelize with sugar.

    Briefly soak raisins in hot water, drain.

    Toast almonds.

    Drain rice, layer with lamb and broth, add saffron, place carrots, raisins and nuts on top, steam covered 25 minutes, arrange.
