  • Vodka
    20 ml
  • ShallotsOr: Onions

  • Tomato paste

  • Butter

  • Chili flakes

  • Parmesan

Method

Step by step

    Finely chop shallots and garlic.

    Heat olive oil and butter in a pan.

    Sauté shallots, add garlic.

    Stir in tomato paste and toast 3 min until darker.

    Deglaze with vodka, let alcohol evaporate.

    Add tomatoes, season with salt, pepper and chili.

    Simmer 10 min.

    Stir in cream.

    Cook penne al dente, drain.

    Add pasta to sauce, serve with parmesan and basil.
