- Potatoes waxyOr: Potatoes floury, Sweet potatoes125 g
- CauliflowerOr: Broccoli, Romanesco1 head
- OnionOr: Shallots, Spring onions1 Stk
- Garlic cloves1 Stk
- Ginger½ cm
- TomatoesOr: Strained tomatoes, Vine tomatoes1 Stk
- Turmeric¼ tsp
- Coriander powder½ tsp
- Garam masala¼ tsp
- CilantroOr: Parsley, Mint1 bunch
- Sunflower oilOr: Rapeseed oil, Ghee¾ tbsp
- Iodized salt¼ tsp
Method
Step by step
- 1
Peel potatoes and cut into cubes, divide cauliflower into florets.

Finely chop onion, grate garlic and ginger, dice tomatoes.

Heat oil in a large pan, sauté onions until translucent.

Add garlic and ginger and cook for 1 minute.

Stir in turmeric, coriander, garam masala and curry powder and toast briefly.

Add tomatoes and reduce to a paste.

Stir in potatoes and cauliflower, season with salt.

Cook covered over medium heat for 20–25 minutes, stirring occasionally.

Sprinkle with fresh cilantro and serve.
