Method

Step by step

    Preheat oven to 130°C.

    Beat egg white with salt to stiff peaks.

    Spoon in sugar, continue beating until sugar dissolves and mass is glossy.

    Briefly fold in cornstarch, vinegar and vanilla.

    Form into round disc on parchment-lined baking tray, slightly hollow center.

    Bake 2 hrs, then cool in turned-off oven.

    Whip cream with powdered sugar stiff.

    Wash and quarter berries.

    Place cream on cooled meringue.

  10. 10

    Top with berries and passion fruit pulp, serve immediately.
