  • Potatoes waxy
    ¼ kg
  • Sunflower oil 130 ml for frying
    as needed
  • Tomatoes 100 g pureedOr: Pureed tomatoes
    as needed
  • Onions

  • Garlic cloves
    1 Stk
  • Paprika sweet
    ¼ tbsp
  • Paprika hot
    ¼ tsp
  • Olive oil
    ¾ tbsp
  • Apple vinegarOr: Sherry vinegar
    ¼ tbsp
  • Mayonnaise
    50 g
  • Iodized salt
    ¼ tsp
Method

Step by step

    Peel potatoes and cube into 2 cm pieces, soak in cold water.

    Pat dry.

    Heat oil to 140°C, pre-cook potatoes 6 min, remove.

    Salsa Brava: heat olive oil in a pot, sauté finely chopped onion.

    Add garlic, briefly fry.

    Stir in both paprika powders and toast 30 sec.

  7. 7

    Add tomatoes and vinegar, simmer 15 min, season with salt, optionally puree.

  8. 8

    Increase oil to 180°C, finish frying potatoes crispy.

    Salt, serve with salsa brava and aioli/mayo.
