- Eggplant1 Stk
- TahiniOr: Sesame paste¾ tbsp
- Garlic cloves1 Stk
- Lime juiceOr: Lemon juice½ tbsp
- Olive oil¾ tbsp
- Cumin¼ tsp
- ParsleyOr: Cilantro1 bunch
- Paprika sweet1 pinch
Method
Step by step

Preheat oven to 220°C.

Pierce eggplants several times with a fork.

Place eggplants directly on the rack and roast for 35–40 minutes until skin is black and flesh soft.

Let cool slightly, peel and place flesh in a sieve to drain.

Roughly chop flesh and place in a bowl.

Mix with tahini, pressed garlic, lime juice, cumin and salt.

Drizzle with olive oil and garnish with parsley and paprika.

Serve with pita or bread.
