  • Puff pastry
    2 rolls
  • Milk
    20 ml
  • Whipping cream
    10 ml
  • Egg yolk
    1 Stk
  • Sugar
    15 g
  • Cornstarch
    3,3 g
  • Vanilla beanOr: Vanilla extract

  • Lime juice 0.25 tbsp zestOr: Lemon zest

  • Cinnamon stick

  • Water
    10 ml
  • Powdered sugar

  • Butter 3.25 g melted

Method

Step by step

    Reduce sugar with water, cinnamon and lemon zest 5 min to syrup.

    Mix cornstarch smoothly with some cold milk.

    Warm remaining milk with cream and vanilla.

  4. 4

    Stir in starch milk and let thicken while stirring.

  5. 5

    Slowly stir in hot syrup.

    Off heat, stir in egg yolks one by one.

  7. 7

    Strain cream through sieve.

  8. 8

    Roll up puff pastry, slice, press into greased muffin pans and form base.

    Fill in cream, bake at 250°C 12-15 min until top has dark spots.

    Sprinkle with powdered sugar and cinnamon.
