  • Green asparagus
    200 g
  • Pistachios
    20 g
  • Butter
    20 g
  • Lemon juice
    1 tbsp
  • Lemon zest
    ½ tsp
  • Garlic cloves

  • Parmesan

  • Olive oil
    ¾ tbsp
  • Salt

Method

Step by step

    Cook spaghetti al dente in salted water.

    Wash asparagus, trim woody ends, cut into pieces.

    Finely chop garlic, roughly chop pistachios.

    Heat olive oil in a pan, fry asparagus 6 min.

    Add garlic and briefly sauté.

    Add butter and let it melt.

  7. 7

    Deglaze with lemon juice and lemon zest.

    Add pasta with some pasta water to the sauce.

    Adjust with salt and pepper.

    Serve sprinkled with pistachios, Parmesan and parsley.
