Method

Step by step

    Finely dice onion, carrot and celery (soffritto).

    Heat olive oil in a pot, render bacon in it.

    Add soffritto and sauté 10 min.

    Add garlic and rosemary.

    Pour in tomatoes and broth.

    Puree half of beans, add rest whole.

    Simmer 20 min.

    Add pasta to soup and cook al dente.

    Season with salt and pepper.

    Serve with parmesan, olive oil and pepper.
