  • PastaOr: Rigatoni, Spaghetti
    100 g
  • Eggplant
    1 Stk
  • Tomatoes 200 g pureedOr: Pureed tomatoes
    as needed
  • Garlic cloves
    1 Stk
  • Basil
    1 bunch
  • Olive oil
    30 ml
  • Chili flakes
    ¼ tsp
  • Iodized salt
    ¼ tsp
  • Pepper
    ¼ tsp
Method

Step by step

    Cube eggplant, salt and let rest 20 min, pat dry.

    Brown in olive oil in batches until golden, drain.

    Heat some oil in same pot, sauté garlic.

    Add tomatoes, season with salt, pepper and chili.

    Simmer 15 min.

    Cook pasta al dente.

    Add eggplant to sauce.

    Drain pasta and combine with sauce.

    Sprinkle with basil and shaved ricotta salata.

    Serve immediately.
