- Marsala3 ml

Step by step

Soak sultanas and candied orange peel in marsala 1 hr.

Dissolve yeast in milk, mix with 100 g flour and 30 g sugar into pre-dough, let rise 2 hrs.

Knead pre-dough with remaining flour, remaining sugar, egg yolks, honey, vanilla, zests and salt.

Knead 20 min until dough releases from bowl.

Incorporate butter piece by piece.

Knead in soaked fruit.

Let dough rise 8-12 hrs (overnight).

Fill into a panettone mold.

Let rise another 4 hrs until dough doubles.

Bake at 180°C 50 min, cool upside down.
