Step by step

Dissolve yeast in lukewarm water with sugar, rest 5 minutes.

Mix flour with salt, add yeast water and soft butter.

Knead vigorously for 10 minutes and let rise covered for 60 minutes.

Divide dough into 8 pieces, roll each into a 50 cm long strand, thicker in the middle.

Shape into pretzel form.

Rest pretzels on a tray in the fridge for 30 minutes.

Preheat oven to 220°C, bring a large pot with 2 L water and 4 tbsp baking soda to a boil.

Bathe pretzels individually for 30 seconds in the soda water, drain.

Sprinkle with coarse salt or pearl sugar, score and bake 15 minutes until golden brown.
