  • Wheat flourOr: Spelt flour
    65 g
  • Yeast dryOr: Yeast fresh
    1 Pck
  • Water 40 ml lukewarm
    as needed
  • SugarOr: Brown sugar
    ¼ tbsp
  • Iodized salt
    ¼ tsp
  • Sesame seedsOr: Poppy seeds, Sesame
    ¼ tbsp
  • Eggs 1 pc for brushing
    as needed
  • Honey 0.25 tbsp for water bath
    as needed
Method

Step by step

    Dissolve yeast with water and sugar, let stand 5 minutes.

    Knead flour, salt and oil with yeast mixture into a smooth dough.

    Let dough rise covered for 1 hour.

    Divide into 8 pieces, form balls, press a hole in the middle and shape carefully into bagels.

    Let rise on parchment paper another 20 minutes.

  6. 6

    Preheat oven to 220°C, bring a pot of water with honey to a boil.

  7. 7

    Poach bagels individually 1 minute per side, drain.

  8. 8

    Brush with egg yolk and sprinkle with sesame.

  9. 9

    Bake 20–25 minutes until golden brown.
