Method

Step by step

    Squeeze salsiccia from casing and pull into pieces.

    Heat olive oil in a pan.

    Brown salsiccia crumbly in it.

    Add finely chopped onion and garlic, sauté 3 minutes.

    Briefly toast fennel seeds and chili flakes.

    Deglaze with red wine, reduce.

    Add tomatoes, season with salt and pepper, simmer 10 min.

    Cook orecchiette al dente, drain.

    Mix pasta into sauce.
