  • Dried porcini

  • Vegetable broth
    230 ml
  • Onion

  • Garlic cloves

  • White wine

Step by step

    Soak porcini in warm water, drain (keep soaking water).

    Cube chicken breast and season.

    Fry in oil, remove.

    Chop onions and garlic, sauté.

    Add risotto rice, briefly toast.

    Deglaze with white wine.

    Add broth and soaking water.

    Stir in chicken, mushrooms and thyme.

    Cook covered in oven at 180°C for 30 min.

    Stir in butter and Parmesan.
