  • Vegetable broth
    230 ml
  • White wine
    40 ml
  • Onion

  • Garlic cloves

  • Parmesan

Step by step

    Trim asparagus, cut into pieces.

    Chop onions and garlic, sauté in oil.

    Add risotto rice, briefly toast.

    Deglaze with white wine, add broth.

    Stir in asparagus and tarragon.

    Cook covered at 180°C for 30 min.

    Stir in butter, Parmesan and lemon juice.

    Season with salt and pepper.
