  • LentilsOr: Mountain lentils
    65 g
  • Long-grain riceOr: Basmati rice
    50 g
  • Onions 1 pc large
    as needed
  • Olive oil
    30 ml
  • Cumin
    ½ tsp
  • Cinnamon stick 0.25 tsp ground
    as needed
  • Bay leaves
    1 Stk
  • Yogurt full-fat
    50 g
  • Parsley
    1 bunch
  • Lime juice
    ¼ tbsp
  • Iodized salt
    ¼ tsp
  • Pepper
    ¼ tsp
Method

Step by step

    Wash lentils, cook with plenty of water, bay and salt 20 minutes al dente, drain.

    Wash rice.

    Slice 3 onions into thin rings.

    Heat oil in a large pan.

    Fry onions 25 minutes with occasional stirring until golden brown and crispy.

    Remove 2/3 of crispy onions, drain.

  7. 7

    Chop 4th onion and sauté in remaining oil.

  8. 8

    Rice and spices into pot, briefly toast.

  9. 9

    Pour in 400 ml water, stir in lentils, salt.

    Simmer covered 18 minutes, serve with crispy onions, yogurt-lime sauce and parsley.
