Step by step

Slice eggplants, salt, let sit for 20 min, rinse.

Fry in oil on both sides until golden brown.

Chop onions and garlic, brown with mince.

Add red wine, tomatoes, cinnamon and bay leaf, simmer for 20 min.

Béchamel: melt butter, stir in flour, pour in milk, thicken.

Season with nutmeg, salt, pepper, stir in eggs.

Layer eggplants, mince and béchamel in baking dish.

Sprinkle with Parmesan, bake at 180°C for 40 min.
