- ShallotsOr: Onions1 Stk
- Garlic cloves1 Stk
- Celery stalk1 stalk
- White wine dry60 ml
- Butter20 g
- Thyme¼ tsp
- Pepper¼ tsp
- Potatoes waxy¼ kg
- Sunflower oil 0.5 l for fryingas needed

Step by step

Wash mussels, discard damaged or open ones, remove beard.

Cut potatoes into sticks, soak in cold water, dry.

Finely chop shallots, garlic and celery.

Heat butter in a large pot.

Sauté aromatics 5 minutes.

Add mussels, wine, bay, thyme and pepper.

Cover pot, steam 6 minutes, occasionally toss, until mussels open.

Discard closed mussels.

Fry fries in two stages (140°C 6 min, then 180°C 3 min).

Serve mussels sprinkled with parsley with fries and mayonnaise.
