  • Miso paste
    1 tbsp
  • KombuOr: Wakame
    2,5 g
  • Bonito flakes
    5 g
  • Water
    ½ l
  • Tofu
    50 g
  • Wakame
    1,3 g
  • Spring onions
    1 Stk
  • Shiitake mushrooms 1 pc freshOr: Shiitake
    as needed
Method

Step by step

    Soak kombu in water 30 minutes.

  2. 2

    Warm water with kombu, remove kombu just before boiling.

  3. 3

    Add bonito flakes, bring to boil once, then strain through sieve (dashi).

  4. 4

    Dashi back into pot, add sliced shiitake.

  5. 5

    Simmer 3 minutes.

    Cube tofu and add.

  7. 7

    Soak wakame in water.

  8. 8

    Take pot off heat, dissolve miso paste smoothly in a ladle with some broth and stir into pot, do not boil.

    Add wakame and spring onions.

  10. 10

    Arrange immediately in bowls.
