  • Carrots
    200 g
  • Ginger
    1 cm
  • Coconut milk
    100 ml
  • Vegetable broth
    150 ml
  • Onion
    1 Stk
  • Garlic cloves
    1 Stk
  • Olive oil
    ½ tbsp
  • Salt
    ¼ tsp
  • Pepper
    1 pinch
  • Lemon juice
    ½ tbsp
  • Cilantro

Method

Step by step

    Chop onion and garlic, peel and grate ginger.

    Peel carrots and slice.

    Heat olive oil, sweat onion until translucent.

    Briefly sauté garlic, ginger and turmeric.

    Add carrots, top up with broth.

    Simmer 20 min until carrots are soft.

    Add coconut milk, finely puree.

    Adjust with lemon juice, salt and pepper.

    Serve with cilantro.
