Step by step

Bring fish with milk and bay leaf to a boil in a pot, reduce heat and let steep 5 minutes.

Slice leek into fine rings, sauté in butter until translucent.

Remove fish, cool, remove skin and bones, flake into pieces.

Pour milk through a sieve and reserve.

Dice potatoes and add, fry 2 minutes.

Add the milk and simmer 15 minutes until potatoes are soft.

Mash half the potatoes for a creamy consistency.

Add cream and fish and briefly heat through, do not boil.

Season with pepper and salt, serve sprinkled with parsley.
