  • Whipping cream
    90 ml
  • Milk
    40 ml
  • Egg yolk
    1 Stk
  • Sugar
    25 g
  • Matcha powder
    ½ tbsp
  • Vanilla extract
    ¼ tsp
  • Iodized salt
    1 pinch
Method

Step by step

    Warm cream and milk in a pot, do not boil.

    Stir matcha powder smoothly into 50 ml warm milk.

    Beat egg yolks with sugar and salt until whitish-creamy.

  4. 4

    Slowly stir hot milk into egg yolk mixture.

  5. 5

    Back to pot, draw to nappe over low heat while stirring.

    Stir in matcha paste.

    Add vanilla.

    Strain mixture through sieve and cool completely.

    Freeze in ice cream maker 30 minutes.

    Freeze at least 4 hours in freezer.
