Preheat oven to 160°C and line a baking tray with parchment paper.

Separate egg whites from yolks and beat the egg whites stiff.

Mix ground almonds and powdered sugar.

Stir bitter almond extract and lemon zest into the almond mixture.

Carefully fold in the egg whites until a sticky dough forms.
