Method

Step by step

    Melt butter in a pot and let cool slightly.

    Beat eggs with sugar and honey until fluffy.

    Mix flour with baking powder and fold in.

    Stir in vanilla, lime zest and salt.

    Fold in melted butter.

    Refrigerate batter 1 hour (important for the bump).

    Grease madeleine pan and dust with flour.

    Preheat oven to 220°C.

    Fill molds with 1 tbsp batter.

    Bake 8-10 minutes until golden, remove from molds immediately.
