  • TofuOr: Tofu smoked
    150 g
  • Pork minceOr: Beef mince
    50 g
  • DoubanjiangOr: Sambal
    ½ tbsp
  • DouchiOr: Soy sauce
    ¼ tbsp
  • Garlic cloves
    1 Stk
  • Ginger
    ½ cm
  • Spring onions
    1 Stk
  • Sichuan pepper
    ¼ tsp
  • Soy sauce
    ½ tbsp
  • Chicken stockOr: Chicken broth
    60 ml
  • Cornstarch
    ½ tbsp
  • Sesame oil
    ¼ tsp
  • Sunflower oil
    ¾ tbsp
  • Brown sugar
    ¼ tsp
Method

Step by step

    Cube tofu into 2 cm pieces, steep in salted water 5 minutes, drain.

    Toast Sichuan pepper in a dry pan and grind.

    Heat oil in a wok.

  4. 4

    Brown mince crumbly.

  5. 5

    Stir in doubanjiang and douchi, briefly fry until oil turns red.

    Add pressed garlic and ginger.

    Deglaze with broth, add soy sauce, sugar and Sichuan pepper.

    Carefully add tofu to sauce, simmer 5 minutes.

    Mix cornstarch with 2 tbsp water, stir in until sauce thickens.

    Finish with sesame oil and spring onions, serve with rice.
