Cook rice.

Cut potatoes into fries shape and fry crispy in oil.

Slice beef tenderloin into strips, salt and pepper.

Heat wok very hot, add some oil.

Sear meat in batches, remove.

Cut onion into thick wedges and tomatoes into wedges.

Briefly sauté in wok, add pressed garlic and aji.

Deglaze with soy sauce and apple vinegar.
