Method

Step by step

    Finely chop onion and garlic.

    Dice carrots, celery and potatoes.

    Render bacon in a large pot.

    Add onion and sweat until translucent.

    Add tomato paste and briefly toast.

    Add lentils, vegetables and bay.

    Pour in broth, simmer 30-40 minutes until lentils are soft.

    Slice sausages and add 5 minutes before end.

    Season with apple vinegar and salt.

    Serve sprinkled with parsley.
