Method

Step by step

    Keep meat and bacon very cold.

    Finely chop onion.

    Season meat with curing salt, pepper, nutmeg, marjoram and garlic powder.

    Process in a powerful cutter with ice cubes and egg into fine emulsion, max 12°C.

    Fold in bacon cubes and onion.

    Grease loaf pan and fill with mixture, smooth, press diamond pattern with wet knife.

    Bake at 175°C 60 minutes until crust is golden brown.

    Let rest 10 minutes before slicing.

    Serve warm in thick slices with mustard and pretzel.
